An unglazed terracotta water jug cools its contents by evaporation: water seeps slowly through the porous clay wall and evaporates from the outside, drawing heat out as it goes. It is the reason Indian households kept a matka long after refrigeration arrived, because the water tastes different and stays cool without electricity.
